Cheesecake recipe

Per Sarah's request, here is the recipe for the vanilla bean cheesecake.  I usually purchase my vanilla beans at Penzey's, as I'm assuming that they are of better quality that ones from the grocery store.  I know you can make vanilla sugar with the leftover pods, but I have yet to do that.  Hmm, Penzey's has some tasty recipes online, too.  Maybe I'll try the peach streusel crisp. Yum, yum. 

(If you ever care to taste the cheesecake, ignore the calorie/fat content per serving listed.  6 slices makes for pretty huge pieces, 8 is more reasonable.)
