Lemon rice with veggies:
2 carrots
2 ribs of celery
1/2 onion
1/2 bell pepper
2 cloves garlic, crushed
sea salt
fresh crushed pepper
1/2 lemon
basmati & wild grain rice mix
Cook rice according to directions. I took half of the rice and left the other half for Jon to cook the same dish that included chicken (he loved his version, too.)
In a saute pan, heat a couple of tbsp of olive oil and add carrots, after a few minutes add the rest of the veggies & spices to taste. Once rice is ready, add it to the saute pan, add a little more salt & pepper as well as lemon juice and saute for a minute or three.
Serve with a lemon wedge & enjoy!
