Menu Planning

Sunday: Late lunch with ma at Mimi's cafe, so just snacked on sweets (real healthy, right?)
Monday: Veggie Quesadillas w/lime
Tuesday: Pork chops & carrot soup (didn't get made last week)
Wednesday: Tacos & spanish rice
Thursday: Grilled cheese & home fries
Friday: ?
Saturday: homemade pizza??

I'm not feeling very creative this week and am just thinking about what we have on hand.  Need ideas, please!!  I checked out some cookbooks from the library and am hoping to be a bit more inspired for next week!  Also, I have some leftover mint leaves that needs to be used up, any ideas for that?

MIXED GRAIN CASSEROLE:
- 1c thinly sliced carrots
- 1c fresh mushrooms quartered
- 1c black beans
- 1 8.75 oz can corn
- 1c veggie broth
- 1/2c pearl barley
- 1/3c snipped parsley
- 1/4c bulgar
- 1/4c chopped onion
- 1/4t garlic salt
- 1/2c shredded cheddar cheese

1) in a 1.5Q casserole combine carrots, mushrooms, beans, corn, broth, barley, parsley, bulgar, onion, and garlic salt.
2) bake covered in a 350 oven abotu 1 hour oor until barley and bulgar are tender. Stir once 1/2 way through.
3) sprinkle w/ cheese, cover and let stand 5 min or until cheese melts.

6 servings (187cal / 4g fat / 7g fiber)
CORE for Weight Watchers (if you use FF cheese, or omit it)
