Lime couscous salad recipe

I've had several requests for the lime couscous salad recipe.  There isn't actually any lime in the salad, but since I love lime so much, I serve it with lime wedges. (I have at least a 1/2 of lime with mine.)

Chop up 5-6 green onions and 2-3 cloves of garlic and saute in olive oil for a minute or so add 1 tsp cumin.
Add 1 1/2 cups of vegetable stock & bring to a boil.
Take off heat and add 1 cup couscous and cover.  Let sit for 10 minutes.
Chop 2 peeled tomatoes, a bunch of parsley & mint (about 4 tbsp), 1 jalapeno  and put in a bowl.  Add juice of 1/2 lemon.
Mix couscous & vegetables together and let set together for at least an hour.  You can let it sit at room temperature or put in fridge.
Add salt & pepper to taste.  Serve over a bed of crisp lettuce with lime wedges and toasted pine nuts if you've got them.  Yum!
