Sunday: Late lunch at Hickory Park aka Send Ben off to Seattle Party....needless to say Jon & I aren't hungry. We may munch on lime & chili flavored popcorn later, but thats about it.
Monday: Chicken/Veggie & Bean quesadillas, guacamole
Tuesday: Tortilla soup & cantaloupe
Wednesday: Pork chops (Jon still hasn't had them, see prior weeks), stuffed cherry tomatoes w/goat cheese, some sort of potato
Thursday: Garlic pepper pasta, parmesan knots, garlic peas
Friday: Sausage/veggie enchiladas, homemade spanish rice
Saturday: Benefit supper for former classmate battling cancer
It seems like there is something else going on this week, but I'm too tired to figure out what.
I'm also looking for quick, easy, & somewhat healthy foods for Sydney & I at lunch. We usually do leftovers, sandwiches, soups, fruit & cheese, etc. This past week I got adventurous and made falafel with mint-cucumber chutney (yum, yum!) Any ideas appreciated!
